    Pancit bihon is probably one of the most served foods during special occasions. This is always present during birthdays. Most Filipinos believe that if you serve pancit bihon during birthdays, it will add length to the life of the celebrant. Usually, if there is a celebration in your neighborhood, even if you are not invited, you will surely get this.

    Most people have their own recipe of pancit bihon. Sometimes, they would put less meat and vegetable because of the limitation to their budget. I have eaten pancit bihon with just almost vermicelli noodles and no pork or shrimp at all. But we don't really want to criticize that. It's a hard life in the Philippines. But sometimes though, some people just don't know how to cook it properly because I have tried some pancit bihon that has a lot of pork, chicken, shrimp, and vegetable and still didn't taste that good. I think the way you cook it has a lot to do with the taste.

    I learned this recipe from my Tita Yolly and once again, she is going to choke me once she found out that I spread it all over the internet. This is her business and nobody cooks this better but her. She would always get bulk orders and I was lucky enough to see how she cooks this. She would always tell me not to share this with anybody because she is afraid of losing business. Well, I don't think that she will lose any business at all. And I strongly believe that sharing what you know is always a good thing.

    Pancit bihon is really not a favorite of mine. But if you are outside the Philippines, you will miss it no matter what. I was never a fan of pancit bihon because to me, it's just an ordinary food. There is really nothing special about it for me. But now that I am here and I am missing the Philippines, I can't help but miss this food too. And right now, it has become a special food because Nunnie likes it, my co-workers like it, and when they tell you it's really good, then that makes me feel good. It's very rewarding.
